WHITE CHICKEN CHILI
Refuel your muscles post-workout with this nutrient-dense, protein-packed white chicken chili! Cooked slowly to perfection in the crockpot, every bite delivers a robust blend of chicken breasts, green chiles, corn, and white beans - ensuring you’re receiving a hearty mix of protein and healthy carbs to aid your recovery and keep those energy levels peaked! Ingredients (makes 6 SERVINGs):
2 chicken breasts
4 cups chicken stock
2 (15 oz) cans white beans
1 (15 oz) can corn
2 (4.5 oz) cans green chiles
3 cloves garlic, minced
1 small yellow onion, diced
2 tsp cumin
1 tsp cayenne pepper
1/2 tsp salt
Topping Options: Lime wedges, diced jalapeño, diced avocado, low-fat sour cream/Greek yogurt, shredded cheese, crushed tortilla chips.
Instructions:
In a 6-quart+ slow cooker, add chicken, broth, beans, chiles, garlic, onion, cumin, cayenne, corn, and salt. Stir together.
Secure the lid and cook on low for 4-6 hours, or on high for 2-4 hours, ensuring the chicken is fully cooked.
Remove the chicken, allow to cool slightly, then shred with two forks. Mix shredded chicken back into the chili.
Serve into bowls, finishing with your chosen toppings!
