Loaded with eggs, fresh veggies, and melty cheese nestled between whole wheat English muffins, these sandwiches are a flavorful, nutritious way to fuel your day on the go!

Ingredients (makes 21 muffins):

  • 9 large eggs

  • Veggies of choice (e.g., 1 diced red bell pepper, 1 cup sliced mushrooms)

  • 8 whole wheat English muffins

  • 8 slices of turkey bacon

  • 8 slices cheddar cheese

  • Salt to taste

  • For Serving (optional): fresh spinach, sliced tomatoes, red onion, mashed avocado, hot sauce.

Instructions:

  1. Preheat oven to 350°F. Grease a small rimmed baking sheet and pour in whisked eggs seasoned with salt and veggies. Bake 10-12 mins or until set.

  2. While eggs bake, toast English muffin halves on a baking sheet in the oven for about 5 mins.

  3. After cooling, assemble sandwiches with egg, bacon, and cheese. Wrap in foil and freeze (up to 3 months).
