MEAL PREP STARBUCKS EGG BITES

Elevate your breakfast game with these Meal Prep Starbucks-inspired Egg Bites! Easy to whip up with just an oven and a silicone egg tray. Perfect for meal prepping a protein-packed morning or on-the-go snack. Recipe adapted from The Girl on Bloor.

Ingredients:

  • 1 Tbs olive oil or butter (to grease egg tray)

  • 8 eggs, whisked

  • 1 cup cottage cheese

  • 4 slices of turkey bacon, cooked and chopped

  • 1 red bell pepper, chopped

  • 1 cup gruyere cheese or aged cheddar, shredded

Instructions:

  1. Preheat oven to 325 degrees Fahrenheit and set up a water bath in a 9x11 baking dish with the silicone egg tray.

  2. Grease the silicone egg tray with 1 tbsp olive oil or butter.

  3. Mix 8 whisked eggs, 1 cup cottage cheese, 1 cup shredded cheese, 4 sliced cooked turkey bacon, and 1 cup chopped red bell pepper.

  4. Fill the egg tray with the mixture.

  5. Bake for about 35 minutes until the eggs are set.

Once cooled, store in the fridge in an airtight container for 3-5 days. Enjoy cold or reheat for 30 seconds in the microwave! For a quick lunch or breakfast, freeze them in an airtight container or Ziploc bag for 1-2 months. Defrost in the fridge overnight and zap in the microwave for 30 seconds.
