CHOCOLATE PEANUT BUTTER GRANOLA BARS

Ingredients:

  • 1/2 cup Peanut Butter

  • 1 1/2 Tbs Coconut Oil

  • 3 Tbs Honey

  • 1 tsp Vanilla Extract

  • 1/3 cup Flaxseed Meal

  • 1 Tbs Chia Seeds

  • 1/2 cup Old-Fashioned Rolled Oats

  • 1/3 cup Pumpkin Seeds

  • 1/4 cup Unsweetened Shredded Coconut

For Top Chocolate Layer:

  • 1 Tbs Coconut Oil

  • 1/2 cup Chocolate Chips

  • Sea Salt

Instructions:

  1. Melt wet ingredients (peanut butter, coconut oil, honey, vanilla extract) in a saucepan over low heat until smooth.

  2. Remove from heat. Fold in flaxseed meal, chia seeds, oats, pumpkin seeds, and coconut flakes. Stir until combined.

  3. Press into a lined 8x4 inch pan.

  4. Melt chocolate chips and coconut oil in microwave safe bowl. Microwave in 30 sec increments, stirring between until smooth. Drizzle melted chocolate a smooth for an even top layer. Sprinkle sea salt on top.

  5. Set in freezer till firm for 20 minutes, then cut into bars and savor!

Store in an airtight container in the fridge for up to 1 week. Your go-to snack just got an upgrade!
